#Jiffy cornbread mix in 12in cast iron skillet.
Success: 82%
It appears two boxes is just the right amount although when I put it in, it barely covered the bottom of the pan.
I didn't put enough oil in the pan so it did stick some but the real problem was it was way too crumbly. Maybe an extra egg next time.
Regardless I ate so much I hurt myself.
Breakfast this morning was cornbread with bacon grease for shortening, corn kernels, & 3 kinds of Allium.
I don't usually buy white cornmeal, but K did by accident, so I rolled with it. #food #cooking #cornbread #quickBreads
@annathepiper says it works really well with blackberry preserves, so it’s a good carrier bread.
If / when I do this again, though, it’s getting salt.
Also I think maybe even more overcooking of the rice.

hm, not enough by itself. but a sprinkle of salt makes it really good.
housemate @RobynGoodfellow says it tastes exactly like something called “spoonbread” but with cornbread texture.
you can still see the rice - I don’t know if that’s by design or not
bamboo skewer came out clean so time to take out and cool
definitely got a crust on it, but not too much of one
