It's drizzling lightly and everything is gray. So I'm standing in the kitchen taking care of my condiments for the next couple of weeks. This time, it's garlic in miso. Simply peel the garlic and put it in miso. Make sure it is covered with miso on all sides. Leave it outside for a week, then put it in the refrigerator for another 2 to 3 weeks.
