My #kimchi isn't authentically Korean, because I brine the Napa cabbage first for several hours, making it "water kimchi". Also, I chop up the leaves in advance, rather than massaging each leaf with the flavourings. Still, I've offered the finished product to many Koreans, and they love it!
#fermentation is a really fun learning process.
My latest #sauerkraut with red onion and mustard seeds seems to be fermenting very nicely.
The first Saturday of January, I'll take a class to make fermented soda: a ginger bug. I have a recipe, and it seems simple, but I prefer to start this with someone who's done it many times. And, it's a good excuse for a #roadtrip, since it's a bit over an hour away, in a small city with a great restaurant and brewery.

We are going back home to the Netherlands in the morning from a short break in Germany.

Having seen many German made Kimchis.
No wonder, sauerkraut is a staple dish here after all.
Seeing that in Scotland this year was more surprising.

I made kimchi a few times with Chinese cabbage. I started a green cabbage for fermentation a few days before we left. Very basic, just to try out some ideas.
Now I'm anxious to see and taste the result.

November 29, 2025. We have an Indonesian hot sauce theme for this southern Minnesota snow day. The kitchen smells wonderful. Some of the fermented Sambal is getting a coconut and spices upgrade to become Sambal Kelapa. It’s four pint jars! The pan toasted coconut and spices upgrade is in the silver bowl. A November 28, 2025 milestone. The shredded carrot fermentation is jarred after nine days on the countertop. The late November fermentation went well without fruit flies or bits of mold making a scene. The recipe is in the Kirsten Shockey “Fermented Vegetables” cookbook. We use this in baked savory muffins and more. @MPaola Oh my. Forever is a long time. We are fortunate. Our first fermentation troubles were minor. Many of our most flavorful ingredients for cooking are fermented in the growing season and then used year round. Cilantro paste is one example. Southern Minnesota has a six month gap in the growing season. Also fermented garlic paste lasts through the offseason. #fermentation, #garlic, #Zhug, #minnesota

I took a #fermentation class from a guy who ferments on a full-time basis. He recommended a 3-week+ ferment for sauerkraut. I find that #kimchi, made with napa cabbage, is ready to refrigerate in only 3 days. I'm taking another class from him at the beginning of January for making a ginger bug soda starter. I have instructions (simple) and ginger, but I still prefer to take the hands-on class before starting the process. The whole business of fermentation is very interesting.

was looking at making miso (thanks @chad ) because I've had some koji rice I grew sitting in my fridge for like a couple years now... and my brain is going into weird places.

At first it was like: can I make miso with beans other than soy? That answer is yes.

And now it's like: let's make southwestern miso with canned seasoned black beans.

@beandreams. Yes. Carrots are a great fermentation. These carrots are shredded in the big shreds. The fermented carrots with ginger are an ingredient for baking savory muffins. Fermented carrots are a substitute for baked sweet potatoes. #fermentation, #minnesota
