Shanghai shaomai have always stood apart. Unlike its meaty counterparts from other regions of China, a Shanghai shaomai is a clump of savory sticky rice tucked into a wrapper—essentially, a bite-sized zongzi. The latest trend is to jazz up the glutinous rice with salted egg yolk and other umami bombs. These shaomai also forgo their classic open-faced form in favor of a pleated topknot like a xiaolongbao.
