Did you know that moles taste very different than gophers? I assumed that two similar ground dwelling rodents would have a similar flavor. But according to Rey, my adorable gopher-trapping assistant who gets to eat all gophers caught, they are drastically different in flavor. Gophers are a delicacy, meant to be torn apart and gulped down, while moles are only good for tossing around and rolling in, for that lovely eau de mole scent.
