茶葉蛋

台湾にも日本のコンビニチェーンが進出していて、特に台北市内ではブロックごとにファミリーマート(全家便利商店)やセブンイレブン(統一超)の店舗が存在してしのぎを削っているような状況になっています。店内で売られている商品も日本とそう大きくは変わらず、中にはパッケージに日本語が印刷された、全く日本のものと同じものもあります。しかし、大きく違うのが店内に入った時、あるいはオープン型の店舗では近づいただけでわかる独特の「匂い」です。

これは店内で提供されている茶葉蛋(チャーイエダン)という商品のもので、煮卵のようなものなのですが、茶葉と五香粉が使われているため八角を中心とする特有の香りを漂わせているのです。私は五香粉が好きなので、この匂いもいい香りだと認識するのですが、苦手な人は苦手な匂いだと思います。台湾ではあちらこちらでさまざまな匂いがすると思いますが、この五香粉の香りはその差異たるものではないでしょうか。

私は日本のコンビニで売られているおでんもなんだか不潔・不衛生な感じがしてしまって一度も買ったことがないのですが、このコンビニの店頭で煮込まれている卵も最初は同じような感覚でした。一体いつからそこにあるのかわからないので、本当に大丈夫なのかと思ってしまうわけです。しかし興味はあったので、今回の訪台時に若い女性が普通にこの茶葉蛋を取っているのを見て、私も勇気を出して購入してみることにしました。

電気で保温された鍋の中で汁に使っている卵をトングで取ってビニール袋に入れて、レジへ持って行って購入します。それは何の困難もないことでした。値段の方はわずか10TWD、50円足らずという安さです。

卵は殻ごと煮汁に浸かっているので殻は茶色く染まっていますが、漬け込む前にヒビを入れられていてスルッと簡単に剥ける殻を剥くと、ヒビの部分が卵白の表面に大理石のような模様を作っています。それをそのまま食べてみると、台湾料理らしく薄味ながらスパイスの香りがほんのり効いた上品な美味しさでした。これを美味しいと感じるかどうかはすべて五香粉が好きかどうかにかかっていると思いますが、好きだという人は一度試してみるといいのではないでしょうか。

もし自宅で作る場合に大理石模様にこだわる必要がなければ、殻を剥いてしまってから漬けた方が短時間でできるようなので良さそうです。これは滷蛋と呼ばれるものになりますが、漬け汁さえ作ってしまえば簡単にできそうなので、今回私は滷味の素として売られていた滷味香なるものを買ってきたので、これを使ってぜひ試してみたいと思います。なお、滷味香というのは原材料がクミン、八角、ナツメグ、シナモン、クローブということで要は五香粉なのですが、このパッケージから漏れてくる香りそのものがまさに台湾の香りで、もう私はこのまま嗅いでいるだけでもいいかななんて思ってしまいます。
