Open ferment and skim that scum from the Krausen

The more I brew the more traditionalist I become.

Not planning on building a coolship nor getting horizontal lagering tanks though.

Krausen on the top of fermenting beer with part of it skimmed of the scum that forms from the hops material and proteins. Not letting this settle back into the beer reduces the unpleasant bitter compounds and makes for a smoother drinking beer.

This is another open ferment and this time I’ve skimmed the hops garbage off the top of the Krausen after the first day of fermentation . Guess I’m getting more and more serious about these traditional methods. Learning along the way.

When I check it tomorrow I should take a photo. Krausen at the early days is such a beautiful puffy thing - and then near the end of fermenting of course not so much.

48 hours since pitching the yeast and I’m down 2°P and the krausen is forming.

Looking down into the fermentation tank at a Krausen forming on the top of the Wort. The foam is mostly creamy white, but at the thickest parts it has a dirty brown top to it.
