Since we haven't had a real redesign on iOS in a very long time: a lot of what you're going to see from third parties come September is apps that have been /ported/ to Liquid Glass, not apps designed from the ground up for it. Everybody is still learning this stuff, and it's a moving target on Apple's side too. That'll mean a lot of shoehorning — glass in places it probably doesn't need to be, layouts put in glass containers whether they need them or not, etc. A lot of iteration is still to come
