Aw... Former student wrote to update me about having been offered a faculty position and awarded an INSPIRE grant for their first 5 years. Yup, there WERE good things about that Ivory Tower job, and keeping up with the successes of former co-workers might just top the list... 😃

Headed to my talk at Instituto de Química, UNAM, I took a photo that reminded me of @Migueldeicaza and @federicomena . Then arrived and caught the Q and A for Alfredo Alexander-Katz. Puros cuates.

Thanks to @buercher for building it.

It's opt-in, not opt-out. It respects Mastodon culture and doesn't index accounts that don't sign in.

That means the index might be small if we don't spread the word.

it's really good though!

Balsamic vinegar, malt vinegar, rice vinegar... This graphic takes a look at the chemical quirks of the different vinegar types and how they're made: compoundchem.com/2023/02/20/vi

Infographic on the chemistry of different types of vinegars. First, an overview of vinegar production is shown, explaining the fermentation of sugars and starches into ethanol, then the subsequent oxidation of ethanol to acetic acid. Six different varieties of vinegar are then explored: Distilled vinegar, balsamic vinegar, wine vinegar, apple cider vinegar, malt vinegar, and rice vinegar. Chemical compounds of interest are highlighted for each, and also detailed in the post accompanying this image.

It's going to form around a large language model AI
