Leftover taco lunch: Ground beef and onion, Mexican shredded cheese, delicious combination of fresh, chopped garden peppers. 1 minute and 30 seconds in the microwave. On store-bought corn tortillas.

My summer breakfast addiction has been a two egg omelette with a twist: After the eggs start to firm up a little I in my pan, I add a layer of finely shredded mozzarella cheese, then a little Pace Picante sauce, then a few halved cherry tomatoes. Top with either Tony’s Creole seasoning or a Cajun spice seasoning I picked up at Price Chopper in Manhattan, Kansas at the end of May. I also include a little chopped ham.
Oh so good! Makes the start of my day so much better.

Breakfast scramble: sautéed yellow onion with two chopped sausages, 2 whisked eggs. Seasoned with “Chophouse Meats Cajun Seasoning with Jalapeño.” Topped with Mild Pace Picante sauce.

I got talked into trying Meat Church “Holy Voodoo” seasoning today at Blackhawk Hardware by an employee and a customer. Both raved about it. I need a jalapeño enhanced rub to use with my smoked and sautéed veggies.
My 2nd attempt at boneless breast homemade fried chicken. Probably my best effort, tho I neglected to do the trick of including some cornstarch in the dredge seasoning flour and also did not crisp cook by turning the oven up to 400° at the end. #CookWithWes
