The thin edge snaps up upon reaching a certain temp (likely 80C according to the number on it), raising the white pin aka "plunger" in the center of the bottom photo & disconnecting the circuit.
The copper sliver noticeable above the pin is called the bridge & in this config is considered a "normally closed" switch.
