Just some late night protein forward banana bread, version #2 and some springiness this time as well vs last time. Here's to hoping it tastes good when I cut it.

Looking at some good numbers ideally based on ingredients and pushing up the protein numbers vs normal bread without sacrificing taste or structure much (no bar or banana brownie)

mashed banana bread mix before baking, looks like cold oatmealhalf way in, coming up, needed to tent to avoid burnoh boy fresh out and looking good, dome is hanging around for now but expected to fall a bit, nice spring to it.all finished and cooling. over all looks good, spring to the bread vs dense, slight dome but did fall as expected... forgot the brown sugar boo
