Did you know a pepper becomes a chile when it is picked & dried?

A green jalapeño or cuaresmeño becomes chipotle. A poblano turns to an ancho.

This infographic from El Jornalero provides a simplified look at some of the most common names of Mexican capsicum peppers & chiles.

This publicly-available infographic from El Jornalero, a Mexican agricultural communications company, gives a simplified overview of some of the most common names of Mexican capsicum peppers and their chiles.

@jjasghar Great hack!

@bento Usually I decide the last minute I want them, so I defrost them in a colander under a running tap.

Seeking suuuuuper simple I can make myself for dinner, because despite (or because of) my current situation, I have even less interest and patience to cook.

2023-03-08

@jezlyn Boil a short pasta in large pot, add broccoli last 5-6 minutes. Mix in 3-4 T pesto, lemon juice, olive oil, salt and pepper. Serve with smoked salmon. Or Parm, or goat cheese, toasted almond slivers.

“When you meet a white person who shares your last name, you know their ancestors probably enslaved your ancestors, LaBauve says. When you are Black, it's just a given that you have white relatives. This is why it didn't seem strange to her, and to so many other Black Woodsons, to welcome Craig as part of the family.”

Did a fun thing yesterday!

A wooden knife carving class. Was a fun experience, learning something new and being full emerged in creating something that didn’t exist before.

Now back to creating my own upcoming classes.

@SRDas I never have used frozen spinach! What do you use it for?

2023-02-07

@SRDas That’s how I look at frozen peas! I always have em.

@hkmolloy some beets just have that earthy flavor! Hope the chutney will get better for you!

2023-02-06

@hkmolloy bitter is hardest to mask. Maybe some extra salt/salty ingredients helps? But I can image that it’s hard to completely get rid of it.
I once had the same problem with some olives that had a bitter coffee like aftertaste. I eventually had to throw them out..

2023-02-04

@snarkysteff Love to brine pork chops in the brine of my fav olives.
Not if I’m more bummed that the olives are discontinued because I miss the olives or the brine..

Forgot to add the obligatory Wait for it! 😁

You've probably heard it before, but we'll say it again anyway: You shouldn't wash raw chicken before cooking!

🍗 Leading causes of foodborne illness are bacteria commonly found on raw poultry, but why do people still want to do it?

@HippieScubaSteve I like to keep it simple, a few flavors only. Depends on what I have in my fridge.

2022-12-21

@SRDas Thats a fun idea! I didn’t think of doing experiments in my knife skills classes, but you gave me food for thought! 😉 Thanks.
Started following you and #kitchenscience , and will use #cookingclass myself.

2022-12-21

@SRDas This Will be a fun test to do in my cooking classes!
(I usually tell them to use a sharp knife, or wear contacts..)

@snarkysteff Vermouth is always good!

2022-12-19

@ProfFerrous Cut in pieces, rub with oil, SP, roast in the oven, puree and freeze in portions. Great as tomato soup, in minestrone, pasta sauce, in stews.
If you have, roast an onion and bell pepper along too for more flavor, thyme or oregano maybe.
