Anthony Bordain was a celebrity chef, author, and television star. While we has an award winning chef, he's best known for his various travel shows where he focused on local cuisine. Bordain was the executive chef at Brasserie Les Halles in Manhattan and then released his now best selling book Kitchen Confidential: Adventures in the Culinary Underbelly where he revealed the real life practices of the restaurant industry.

This book catapulted Bourdain into stardom His books, and his television shows were unique in how personal they were and how much Bourdain himself played a central role in them. In his travel programs, especially the later programs, focused as much on how Bourdain himself related to the food and experience, which many audiences found compelling and relatable.

Spring break is almost over. Looking forward to seeing students and coworkers again. Not looking forward to state testing, though.

Pic is a new dish that Yoshiko made. As I understand it, it was partly inspired by both #JapaneseCooking and #FrenchCooking. Doesn't have a name yet. Almost vegan, but not quite. Delicious.

Main Christmas dinner with the kids will be a couple of days later this year due to travel plans. I'm following the Paul Bocuse Pot Au Feu recipe (although I confess - it's been slightly Americanized), and this is the first step: roasting the bones and vegetables, then cooking and straining them for the soup stock. I could bathe in the final product!

Bones and vegetables laid out on trays to bake in the oven for about an hour, and then they will be boiled for a couple of hours, before straining and de-fatting. This is the stock for the Pot Au Feu. I'll keep this in the freezer until the day of the dinner.
