Christmas Dinner

On Christmas Eve we had a very traditional German meal of roast goose, red cabbage and a choice of dumplings or simple boiled potatoes at my nephew’s place. My husband and I contributed by preparing the red cabbage using my late mother’s recipe.

We cut two heavy cabbage heads into thin ribbons a couple of days before and cooked them so that they could soak up all the great flavours over the coming days. Luckily it was cold enough to store the two big saucepans on the balcony. One of them was taken along and the second one was for our own use over the following days.

I had another red cabbage which we also cooked on the weekend after Christmas and the result is now in our freezer 😋

Schnitzel

For our Christmas Eve dinner, just the three of us, we made seitan schnitzel with sides of roasted Brussels sprouts and potatoes. Unfortunately I ran out of time to make a gravy, so I fried up some onions.

I remembered from last time that we needed more egg replacer, so I made 6 equivalent for dredging. I think I could have halved the peppered flour. We also heat way less oil in the dutch oven, which does mean the sides don’t fully fry.

The nice thing about this seitan (beyond being deliciously deep fried) is that the earlier baking step makes it much more tender than our usually favorite style of seitan.

German style food

The weekend was quite traditional in terms of food, every now and then I need that.

On Saturday we had boiled potatoes and sweet and sour green cabbage (white cabbage in German) accompanied by some Nuremberg bratwurst. The cabbage dish is something my mum used to make a lot and it fits this time of the year perfectly.

On Sunday we had German potato dumplings, red cabbage (from a jar but made better with an onion, some apple pieces and a little vinegar and sugar) - and pork neck steaks that my husband in his infinite wisdom 😬 decided to spice up with a leftover spice blend that contained a very hot chilli powder and Chinese Five Spice mix. The whole affair ended up a whole lot spicier than it should have been and was slightly odd with the red cabbage but still very edible! 😆

Considering that I don’t like baking much I was surprised to find myself preparing another cake only a month after the last one. This apple cake is very easy, I grew up with it and still like it a lot. Sometimes I add some blueberries too. Yum.

The last three days we had meals inspired by several cuisines: Ukrainian/Russian and German, Afghan, and Japanese.

We started with Pelmeni (dumplings, filled with minced meat) and German Maultaschen (bigger dumplings, filled with meat and vegetables) served in a crĂšme fraĂźche sauce. I based this on my German Maultaschen recipe but I used spicy Italian Pancetta and blanched julienned Kohlrabi leaves to make it somewhat different.

Today we had sweet and savoury meat tofu with Donburi sauce on Japanese rice, accompanied by shredded Napa cabbage, kimchi from a tin, spring onions, sesame seeds and a sprinkle of Tekka Miso. By accident I defrosted smoked tofu but I think it worked even better than the natural version.

It’s been a week, we were away for most of that, in Berlin for my mother-in-law’s birthday. Today was my first day back to proper cooking.

I went back to an easy family favourite, turmeric lemon fried rice with some wurst dressed like German Currywurst, a Bratwurst with wild garlic which would have been nice as is but the family voted for the addition of ketchup and Garam Masala. I also added a simple tomato salad.

The rice also had a few unique items: there were fresh jalapeños in the fridge, I used them instead of a green bell pepper, and I had saved the leaves from a bunch of red radishes that I got yesterday.

Pretty tasty as always! 😄

After a lot of rainy and windy jet stream weather the sun has come back and it’s warm here today (33°C). Not really the perfect day for fried potatoes, the heat at the hob was quite something. Luckily I had assistance from my son which made the whole experience a lot more bearable. We managed to produce a nice potato dish with a side of herbal quark. â˜ș

(I’ve only recently learned that ă‚žăƒŁăƒŒăƒžăƒłăƒăƒ†ăƒˆ (jaaman poteto = German potatoes) is the Japanese name for fried potatoes (what we call Bratkartoffeln), and I’m still flummoxed by the fact that it’s not ăƒ‰ă‚€ăƒ„ăƒăƒ†ăƒˆ(doitsu poteto) as doitsu is the proper Japanese word for German/deutsch. It must have been introduced by an English speaking person. đŸ€·đŸŒ)

Isn't it nice when people of all nationalities laugh about the same thing?

A brave guy from London has made it his mission to taste foreign food he's never had before. Worse: he can't even read what's in the tin. Hence the title of his social media channels: "Food I Can't Read".

The result is often hilarious (and, don't worry, his producer checks it's safe to eat beforehand).

What's even nicer is that he's gained an international fan base now. Example: a teenager in Munich went into an Asian supermarket and started singing the theme tune. A few aisles further down, a stranger continued the melody!

So, here he is, eating a German "Senfei". I won't give too much away, just that I'd never eat a tinned one, either. They're alright if you make them from scratch.

This dish is a family favourite as we all like smoked fish. Every time we eat this it’s slightly different. All you need is some buttery parsley potatoes, a simple side salad, and various kinds of smoked fish. We had mackerel, trout and hot smoked salmon. The greatest challenge was the whole mackerel because of the fish bones but even that worked fairly well. I also made a dip of mayonnaise with harissa paste and a simple cucumber salad. Everyone was happy and I was told the potatoes were perfect đŸ€©

This morning I found fresh chanterelles in the supermarket; this doesn’t happen often, so I bought them. To get the most out of them I changed my cooking plan and we had them today with shop bought wild garlic pesto, kohlrabi leaf ribbons and bavette pasta. Delicious.

On the weekend my husband and I made lamb fillets, prepared strictly according to recipe so that they are juicy and flavourful. The first round was with homemade Greek style cabbage salad, pan fried bell peppers and basmati rice. On the second day we made potato mash with caramelised onions and tomato salad plus feta cheese. Yum!
