When you have to get creative because the pie shells got too dark on the pre-bake. Hopefully after the first 15 minutes at 425 I will remember to turn the oven down to 350°. Son also came up with the other plan: he remembered I had gotten the mini cheesecakes on sale at Costco this week. 4 pies are in the oven and I’m really hoping the flavor of classic pumpkin pie with whipped cream will make up for the over-browned crust.
