Sambar with medu vada. Not the best one maybe (and it lacks okra), but as it’s my first with medu vada, I’m quite happy with the overall taste. Of course for dinner, not for breakfast like in Southern India, because why not :)

One cup toor dal (split pigeon peas),
two cups water,
two chopped medium sized tomatoes,
one chopped medium sized onion (प्याज),
one chopped medium sized pumpkin.
