前陣子因為跟髮型設計師交換IG,他發現我有在做烘焙之後,我們從聊頭髮開始轉向聊食物,他像網購一樣一口氣訂了司康、雪Q餅、巧克力卷卷跟貝果,我意外多開發了一個客戶。
一次送貨到店,剛好讓他在年前加班這一波,稍微有點心靈跟身體上的安慰。

Pumpkin, cheese, and sunflower seed scones (I gather the wacky USAians may call this "biscuit".)
Kinda just winging this one, have two big tubs of roast #allotment butternut pumpkin in the fridge needing using. This used up one.
Preheated oven to 240°C
Mixed 736g skinless roast pumpkin, 6 tbsp sunflower seeds, 3 tbsp golden caster, 3 tsp chipotle powder, and 1 tsp salt into a paste.
Melted 150g butter and folded this into the mix, then folded in 500ml milk. (Could have been less milk, on reflection, half as much.)
Folded in 150g grated cheddar, 60g grated parmesan, and 1.5 tsp baking powder.
Then started blending in self raising flour about 300g at a time first with a wooden spoon, then by hand, until I had a very soft but workable dough. In the end maybe 1.3kg flour used.
Because lazy... just bashed this into two discs which I have cut into wedges, brushed with milk, and sprinkled with sunflower seeds.

@quadrivial I hope there's something I can find that's closer to me.... like maybe Springfield or Kansas City MO, if not I'll just test different recipes repeatedly on my spouse until something works well...
