Bread & Butter Pudding

- A loaf of thick fruit bread, croissants or brioche.
- 3 eggs
- 3 tablespoons sugar
- 2 cups of milk and cream mixed together in whatever ratio you like
- 1 tsp vanilla bean paste
- 1/2 cup toasted hazelnuts crushed
- 1/2 cup good chocolate buttons or chopped pieces

Start by slicing the bread/croissants and remove any hard crusts then butter. Next whisk the eggs together with the sugar and milk. Now layer the buttered bread in the bottom of an oven proof dish or ramekins with bits of well-buttered, toasted bread sticking out the top. Scatter in toasted hazelnuts and chocolate pieces which will lovingly melt during cooking. Finally pour the liquid over the lot and pop into the oven. Bake at 180c for 30 minutes. 5 minutes before the end of baking sprinkle a teaspoon of brown sugar over each pudding for a toffee crust to die for. Serve with thick cream or ice cream.

It also makes me sad that there are people out there who feel they must comply with this abhorrent practice to keep their job.
Individual responsibility is important. However, knowing there are regulations makes it so much easier for people to say no.
