Also I think I ate some meat two days ago. I am #flexitarian I am currently deeply worried by what I saw about fish and over-fishing... I think I am going to restraint A LOT on fish meals I love #algaes too Do you protect algaes from human consumption? Or it is the sort of issue you don't care?

The husband and wife team prepared Menchi Katsu, Japanese hamburger steaks with egg and Panko covering. Very moreish, especially if you make them with lamb mince (well OK, this was 50% beef actually). We had these with Tonkatsu sauce, a dollop of Karashi mustard, shredded Napa cabbage, a Japanese style cucumber salad and, of course, rice with furikake.

We had delicious Shogayaki (Chili Oil Ginger Pork) cooked by my son. My recipe database indicates that I made this only once before (in 2020) and my previous photo shows me something definitively not looking as good as this. I think I need to make him cook more often.

I prepared all the other items:
🥢 Enoki Mushrooms with Garlic & Spring Onion Sauce
🥢 Hokkaido seaweed salad
🥢 Miso soup
🥢 Japanese rice

I also used some furikake on my rice which came from an assorted box and turned out to be “small fish taste” - this made my meal VERY Japanese all of a sudden 🤣

Japanese style Kyushu Dashi hot pot soup. So popular in this house that today my son asked for this as a celebratory lunch on the day he hears about his leaving exam grades from school. We still don’t know when exactly that day is but I’m happy to oblige.

Once you have all the ingredients in the house (hence the trip to the Asian supermarket the other week) this is really easy to prepare, but a cooker for the table is helpful - so that each participant can cook their own items. I’m using a special pre-made Kyushu Dashi soup base but any other Japanese soup base should do too. The ingredients are up to you, we love some thinly cut frozen pork rolls and dumplings in addition to various vegetables.

Simple to prepare, yet very satisfying. I asked my son to help as time was running away and while I washed the rice for the rice cooker he had basically gathered and cut up everything we needed. He made the salad and started with the tofu puffs. Then we folded the dry clothes and hung up the laundry while the rice cooker and the tofu puffs did their thing. On top of that I had to cut a spring onion, decided to use up some leftover toasted sesame seeds, and turned the tofu in the sauce at some point but this was not much work at all.

On the weekend my husband and I made lamb fillets, prepared strictly according to recipe so that they are juicy and flavourful. The first round was with homemade Greek style cabbage salad, pan fried bell peppers and basmati rice. On the second day we made potato mash with caramelised onions and tomato salad plus feta cheese. Yum!

On meatless Monday (after a weekend of eating out) my son and I made Schnitzel from King Oyster mushrooms with Japanese Tonkatsu sauce and Korean Kimchi rice with added Kohlrabi leaves. The leaves come from my balcony. We went easy on the Gochujang in the Kimchi rice this time which was better for my tastebuds. Definitely a winning combination.

Yesterday there was a Chinese style fried rice dish with king prawns and sweet chilli sauce. Some of my eaters added copious amounts of Sambal Oelek 🫣🙄 but I thought it was just fine with sweet chilli sauce.

Here we have an Indian Bhindi Masala with rice and a few extras. I guess most people in the non-Indian English speaking world would call this an okra curry. Whatever you would like to call it, it was very tasty!

Today I was back in the mood to try another one of the herbal sauces/dips in my recipe repository. My son and I made potatoes, spring remoulade, fish fingers and also a green salad at the side. While rummaging for something in my food cupboard, I also came across a jar of (vegan) jalapeño mayonnaise that was warmly received by all participants of the eating event.

We bought a new rice cooker because a small but important plastic thing to arrest the inner lid broke off the old one. It is still usable but slightly more cumbersome. The new one is tiny so we are keeping the old machine for the days when we are more than three people.
At first I had trouble understanding some of the instructions in the manual and to get the buttons to do what I wanted them to do but in the end we got some absolutely perfectly cooked basmati rice out of it. Better than cooked in a saucepan, that really means something! I will try it with Japanese rice on Friday.

With the rice we had something called Kadhaz’ Paneer Palak, or at least a vegetarian approximatation of it: a tomato and red onion based sauce with a few vegetables. I didn’t have fresh spinach and substituted with fresh roquette. There was also no paneer but what is known as Grillkäse (BBQ cheese) over here works just fine. I added chickpeas and a few leftover fried mushrooms. The sauce produced by following the recipe is really flavourful, I love it, despite the fact that I always have to sneeze when dealing with chillies and black pepper. 😅

There was nothing green in sight today on our plates 🤣

My son had asked for Yorkshire Puddings, one of his British childhood favourites. It kind of fits with the fact that he has received his first ever British passport just recently.

So we made homemade onion gravy, mashed potatoes, Yorkshire Puddings and pork neck steaks. I guess the onions count as a vegetable. We were actually quite pleased with our efforts.

This is what you eat as "fast food" after six weeks in Greece or so. All of this is made very quickly. Most ingrediences are still from Greece/Italy. And it's so delicious.
