Last week we had Okonomiyaki, Japanese pancakes with mixed in cabbage and whichever topping you like - or in our case whatever *I* feel like cooking 🧑🏼‍🍳

For these I used a pre-made gluten-free and vegan rice flour mix that I had got from Kokorocares.com quite a while ago but ignored for too long. The batter was good and was supposed to yield four small pancakes. I used it to make three medium sized pancakes and with all the toppings (bacon, Pak Choi, mini king oyster mushrooms) this was a good meal for the three of us (the hungry child eating the biggest one 😏).

Usually you get to see photos with Okonomiyaki pancakes smothered in lots and lots of mayonnaise and Okonomiyaki sauce. I personally prefer them with a little less mayonnaise and sauce to be able to see and taste the toppings. My Okonomiyaki sauce is also a bit heavier on the tomato side of things than the shop bought one; it came from a recipe that was supposed to be from a Japanese lady running a cooking class, so I guess it’s like with all home cooking, recipes differ from family to family.

On the weekend my husband and I made one of our favourites, Japanese Hamburger Steaks (ハンバーグ) with homemade Hayashi sauce (a red wine sauce). The sauce alone is a dream. I always cut up some vegetables (carrots and/or parsnips) to be cooked with the sauce, so yum!

Fun fact: today I saw in a video that you can replace red wine in food with strong black tea (for the tannins) and a teaspoon of distilled white vinegar (for the acidity). Maybe I should try that one day.

Behold the feta henge

Tomato rice can be a fulfilling meal by itself but it’s also nice to have some sides, like quick dressed feta and maybe fish (today) or Cevapcici (yesterday). A piece of friable cheese like Halloumi is also a good addition. A little Ajvar or any other spicy condiment will go well with the rice too, ours was Sambal Oelek and a homemade chilli paste that we got from a friend.

The sole fillets were bought already breaded as I simply could not find any “naked” sole fillets. Since we don’t have the weekly fish stall anymore, our range of available fresh fish has shrunk considerably and usually I have to buy frozen fish when I’m looking for something beyond salmon fillets.

The ready made Cevapcici were made of chicken; we wanted to try them out but they just weren’t the real deal 🥴

Pasta alla Puttanesca

Last week I bought a fancy pasta called Tripoline No 81. I had seen this shape before on photos and read that it was great for holding sauces, and after trying it out today I can attest that this is definitely true. My pasta was from Rummo which has a good reputation as a pasta manufacturer but other brands are obviously available.

I tried them with an easy Puttanesca recipe which I love because it’s so flavourful. Mind you next time I’ll be a bit more careful on the dried chillies 😅

What a day this was! I woke up at 4 am and was soon completely awake as I remembered that my child needed to go to uni this morning - through the forecast snow storm. Due to growing up in the UK he has not much experience with how cold it can be here in Germany and was originally planning to cycle 10 km, some of it through countryside with nobody else around. I knew I had to convince him to try the public transport system as the real feel temperature was supposed to be -13°C and it would be tough to cycle through the fresh snow that kept falling. There were already about 10 cm of snow at that time. When he got up I talked to him. He agreed as it was still snowing heavily. We checked and the bus was going. He changed to a tram later but that one got stuck because of a truck blocking the tracks, so he walked the remainder, about 20 minutes (he’s a fast walker). On the way home he had to walk again for a bit but got home without much trouble on the trams. I was so relieved when he was finally back again!

Despite being very tired from all of that I managed to cook a decent meal. It was easy, the rice was done by the rice cooker, the fish came from cans and the vegetable dishes didn’t take much effort at all. The daikon radish was quickly pickled. The spinach and the Pak Choi only needed blanching and a sauce each. The mushrooms were fried and seasoned with a little mentsuyu, some sake and a chilli sauce. A good meal helps a lot when you are frazzled 😅 but it all went on one plate today.

Christmas Dinner

On Christmas Eve we had a very traditional German meal of roast goose, red cabbage and a choice of dumplings or simple boiled potatoes at my nephew’s place. My husband and I contributed by preparing the red cabbage using my late mother’s recipe.

We cut two heavy cabbage heads into thin ribbons a couple of days before and cooked them so that they could soak up all the great flavours over the coming days. Luckily it was cold enough to store the two big saucepans on the balcony. One of them was taken along and the second one was for our own use over the following days.

I had another red cabbage which we also cooked on the weekend after Christmas and the result is now in our freezer 😋

On the last weekend before Christmas we had one of our Mediterranean style food extravaganzas that we seem to need every now and then. The giant beans have definitely become one of my favourite dishes!

There were:

Japanese style meal Friday

Sometimes the most unassuming things are the best: the thinly sliced green cabbage ribbons that I stir-fried on high heat had developed just the right amount of roasting aromas and the tablespoon of Mentsuyu (Japanese soup base) that I added at the end made it perfect so that it became the favourite part of my meal.

We had all of this:

🥢 Julienned daikon with a little salt

Fennel and carrot stir-fry

At the moment I’m looking for dishes that I can make to use up a bottle of Happy Boy mushroom sauce. Its purpose is to add umami and can be used instead of soy sauce. I find it’s mainly salty and a little sweet but of course also tastes of mushrooms. I bought the bottle after reading comments that it’s useful for vegan cooking, and it certainly is, but it does not quite hit my preferred flavour profile and I can simply use soy sauce, sugar or mirin, and ground up dried shiitake mushrooms for the same or a better result. Right now the bottle occupies premium space in my fridge that it doesn’t deserve 😅

Anyway, in today’s fennel and carrot stir-fry it worked quite well together with some Japanese Amazake that I forgot to drink before it’s Best Before Date and now use for sweetening purposes in cooking. I also added some ground sesame seeds after taking the photo, very yum and totally suitable as a main meal eaten over Japanese rice.

Silesian potato dumplings (Kluski)

You could make them yourself but I’m lazy and I bought my ready-made Kluski from the Polish stall that visits every week and decided to make quite a rustic meal with them. I started with caramelising onions in one pan, then fried consecutively bacon pieces, mushrooms, and spinach with garlic slivers in another pan. In the end the last three items went back into my huge frying pan to keep them warm while I simmered the Kluski. Another great meal that works well in the colder seasons.

Carribean style cod in a slightly spicy tomato sauce

I love eating fish and I‘m still missing the fish stall we used to find in the now defunct market in front of our building. The fish packed in plastic that’s mostly available from our supermarkets is just not the same as fresh from the stall.

Still I had ordered some cod which I used together with a frozen box of leftover tomato sauce from my freezer. This made for a really fast meal, as I only had to add a few spices to change the flavour profile of the sauce somewhat once it was defrosted, put the fish pieces on top and waited for them to cook through. All of that while the rice was steaming away. I squeezed some lime juice, sprinkled chopped parsley and paprika pul biber on top and voilà, a nice meal was ready.

*Requests by my son - Polish pierogi (stuffed dumplings)*

Have you ever had proper Polish pierogi? They have really interesting fillings and taste just great, even when bought ready made. Since we hadn’t eaten these for a while and the son requested them I had bought two packs at a mobile Polish food stall that stops nearby every week, one filled with mushrooms with sauerkraut, the other with meat.

Traditionally pierogi are served with simple toppings: sour cream, chives, dill, fried onions, bacon, or melted butter are all common ingredients. Apparently they are also eaten with sauerkraut, or mushrooms fried in butter, possibly with added onions and bacon.

I still had some leftover white and red cabbage, so I took those to replace the sauerkraut. I really liked the thought of mushrooms and got out chanterelles in a jar and warmed them up in melted butter. Instead of bacon I used a bunch of small pork sausages I had brought at the same Polish food stall as the pierogi, cut them into pieces and fried them.

We ended up with a quickly prepared hearty winter meal that all of us enjoyed.

German style food

The weekend was quite traditional in terms of food, every now and then I need that.

On Saturday we had boiled potatoes and sweet and sour green cabbage (white cabbage in German) accompanied by some Nuremberg bratwurst. The cabbage dish is something my mum used to make a lot and it fits this time of the year perfectly.

On Sunday we had German potato dumplings, red cabbage (from a jar but made better with an onion, some apple pieces and a little vinegar and sugar) - and pork neck steaks that my husband in his infinite wisdom 😬 decided to spice up with a leftover spice blend that contained a very hot chilli powder and Chinese Five Spice mix. The whole affair ended up a whole lot spicier than it should have been and was slightly odd with the red cabbage but still very edible! 😆

Japanese style meal

I‘m way behind with my posts, this is from Friday already 😅

I was in the mood to make several vegetable dishes and to use the yummy ready made sardines in sesame sauce (straight from Japan via Kokorocares.com), so we ended up with all of this:

Pastrami quesadillas

I got a lovely piece of chicken pastrami from my nephew and had my husband use most of it for a tomato pasta dish he cooked over the weekend (photo 2). Very yum but nothing new.

I had kept a small piece of the pastrami to make something I’ve never done before, quesadillas. This was so easy, using ready made tortillas, lots of grated cheese, some butter for frying, and of course a jar of salsa. I also added some crème fraîche (in place of sour cream), a light green salad and ringlet pasta in a tomato sauce that I had found languishing in the fridge. All in all a good combo that filled us up nicely.
