Upside Down Chicken (or... Maqluba or Maqlooba or Maqlubeh - a traditional Syrian, Iraqi, Palestinian & Jordanian dish). This is the first time I have made this dish and it's a KEEPER. Even the flipping of the dish after it cooked on the stove top worked out beautifully. (And yes, this is my own particular version.)

A serving dish showing a portion of the Upsidedown chicken has been removed. There are browned chicken pieces on the top, with golden rice, and a tomato-cucumber-parsley gremolata sprinkled over the top. Also: some toasted pine nuts for good measure.

You can see all the layers of this dish here: the potatoes are on the bottom, then the greens, the carrots, roasted eggplant, and of course the Basmati rice, and then the chicken. On the top is the gremolata as previously described.

Top left, clockwise: roasted boneless chicken thighs, the greens (spinach, dill, chives), home made chicken stock from boiling the chicken first before browning, roasted carrots sliced on the diagonal, a whole lemon, and a blue plate with roasted eggplant and golden Yukon Gold potatoes.

I also found out that chili limón flavored pork rinds go great with mayo!
