It's what's for dinner: wild caught Sockeye Salmon with Summer Veg. I add whatever veggies I have handy, so I used leftover French green beans, garden cherry tomatoes, diced red & green bell peppers, some feta cheese and lemon zest, sprinkle of dill. Place the salmon on top with a dusting of paprika, a smear of walnut paste if you have some, lemon slice, and a few chives. Bake at 400 about 15-20 minutes. Served over gluten-free pasta.

I may have never mentioned that I am a tinned fish aficionado. So many great brands out there, so many different selections, and they make perfect, simple summer salads. Today's menu: mackerel is featured.

Upside Down Chicken (or... Maqluba or Maqlooba or Maqlubeh - a traditional Syrian, Iraqi, Palestinian & Jordanian dish). This is the first time I have made this dish and it's a KEEPER. Even the flipping of the dish after it cooked on the stove top worked out beautifully. (And yes, this is my own particular version.)

This is my favorite way to cook beef short ribs, using a recipe by Eric Kim on Food52. I do change it around a little bit here and there. Tonight I served it with polenta instead of mashed potatoes and I used a bunch of brown shimeji mushrooms instead. Always delicious, especially with that gremolata to top it off.

It’s a Fireworks Focaccia Garden for Fourth of July! Hope you all enjoyed the holiday with lots of family, friends & fireworks to celebrate the day. I always enjoy bringing the garden into my own kitchen. 🌿🌱🍃

I was going to make savory waffles for dinner, but somehow things took a turn and we ended up with bacon-cheddar pancakes on a bed of mixed, sautéed greens with lemon zest, kalamata olives and feta cheese. The batter seemed too thick for waffles which is likely because I failed to follow the recipe directions.

It's spring planting season in Georgia, which means I don't have as much time on here as I'd like. But on the weekends, I still like to get in the kitchen and put things together. Here's a take on Salad Niçoise, using found ingredients from the fridge/freezer: mahi mahi for the seafood, some hard-boiled eggs with anchovy mince, and anything else I though would work - alas, no green beans! The lemon vinaigrette was a good match.

Putting the ebelskiver to work this afternoon. These are delicious with an herby yogurt-sour cream dipping sauce. While Danish ebelskivers are traditionally like little sweet donut holes, I prefer a savory treat. (Similar treats in West Africa are called vitumbua.) Mine have green onions, herbs, and jalapeños mixed into the batter, and a cube of cheddar is dropped into the center of the batter before rolling them over.

A staple around here during the summer: roasted, smashed, golden Yukon potato salad.

Here, with a creamy yogurt / sour cream / mayo dressing - but I've also used a lemon vinaigrette and it was just as delicious.

Torta Pasqualina (which originated in Liguria) 🤩 never disappoints: spinach, ricotta, eggs (strategically placed), in a homemade crust. Who would like a slice?

Roasted Carrots Parisienne: roasted in a hot oven for 20 minutes with paprika, S&P, EVOO, a drizzle of honey, zest and juice from a tangerine, fresh rosemary and thyme to serve. Always a treat.

I don't know why we don't do this more often: I love a spatchcock chicken. The butcher at our local Publix will prepare it at no extra charge. Tender, juicy, flavorful - and easy to turn into a sheet-pan meal that cooks in an hour. Plus it's another excuse to use the roasting laurel, one of my favorite kitchen gadgets that provides air circulation during cooking.

I am a lazy baker, but I love focaccia... so I use frozen bread dough with remarkably tasty results.

Slow-roasted chicken that can be done in the oven or a slow-cooker. I'll often put this together before heading out to work, and the house smells heavenly when I walk in the door: 6 boneless/skinless chicken thighs, a couple Tbsp each Dijon and mustard grains, 2 Tbsp dark honey, 1 tsp each coriander, paprika, cumin, turmeric, S&P, baked on very low heat for several hours.
