#biscotti making was (mostly) successful! The dough spread during the first #bake and ended up fairly flat. I rested it for 10 minutes then used a serrated knife to slice it on an angle before the second bake.
Still tastes great (rosemary, fennel, orange lemon, pistachios), even if it is a bit narrow. 😆

A question for those of you who make #biscotti - how long do you leave the dough to cool after the first bake?

I have one recipe saying "slightly cool" and another saying "cool completely". Does it actually vary by recipe or is there a general rule I should follow?

Friday afternoon, I showed @sebalicious how to make biscotti so that we could have it with our Saturday morning coffee. We had a lot of fun during the process of baking, cutting, baking again, and dipping! These traditional anise and vanilla biscotti are packed with mini chocolate chips and roasted almonds, then dipped in dark chocolate, and finished off with a dusting of roasted pistachios.

As expected, they went deliciously with a perfectly made (by Bash, the very best barista) cappuccino! 🤌🍪🇮🇹☕️😍🤤

Pistaasi-biscottit!

Tällä ohjeella tulee noin pellillinen, eli kaksi matalaa leipästä, jotka leikataan viipaleiksi. Itse tein tän heti tuplana, kun nämä kerran säilyvät kuivattuina huoneenlämmössä muutaman viikon.

2 kananmunaa
1 munankeltuainen
150g sokeria
215g vehnäjauhoja
7g leivinjauhetta
70g kuorittuja manteleita
70g kuorittuja pistaaseja
Yhden sitruunan raastettu kuori ja mehu
35g voita

Sekoita kananmunat, keltuainen ja sokeri. Sekoita vehnäjauhot ja leivinjauhe ja yhdistä munaseokseen. Lisää rouhitut mantelit, sitruunan raastettu kuori ja mehu sekä sulatettu voi joukkoon.

Jaa taikina kahteen osaan ja muotoile lastalla/silikonikaapimella pellille kaksi sellaista pitkulaista ”leipää”.

Paista 150 ºC uunissa 40 minuuttia tai 130 ºC kiertoilmalla 35minuuttia. Älä päästä leipäsiä ruskistumaan!

Nosta pellit pois uunista ja anna leipästen jäähtyä pari minuuttia, leikkaa ne sitten 1 – 1,5cm viipaleiksi jotka ladotaan pellille kyljelleen.

Paista viipaleita uudelleen 180 ºC uunissa 4-5 minuuttia tai kunnes ovat hyvän värisiä. Avaa uuninluukku ja pudota lämpötila niin pieneksi kun saat, nyt on tarkoitus kuivata pikkuleipäsiivut ihan korpuiksi.

Valmiit korput säilyvät viikkoja jos ovat ihan kuivia.
