Made a traditional mozzarella tonight but due to changing plans, my timings were WAY off. After cutting the curds, I ended up letting them rest for ... 6 hours 😅
So I just continued with cooking the curds at that point and didn't bother to let them ripen anymore. Ended up with a curd that stretched fine! Nice and tangy too
I just wish my poor timing didn't cause me to stay up past 3 AM finishing that cheese.
