I haven’t posted here in a while, and I’m still figuring out the balance between posting here and posting on Mastodon. So today here are two jars or fermenting cucumber slices (dill pickles) and two jars of fermenting grape tomatoes. I haven’t done tomatoes in a few years as they never really worked out reliably for me. I was more precise with salt in this batch so I’m hoping they work out — I’ll find out in a week or so. The pickles I’ve done previously have always turned out great, and my son loves them 😀

Pour les pro de la #lactoFermentation ici, est ce qu'on peut ajouter des herbes aromatiques au départ ?

Je voudrais tenter une fermentation de piments verts marocains, avec du citron et de la coriandre fraîche (feuilles).

Ça peut le faire tu penses ? ou bien la coriandre il vaut mieux l'ajouter à la fin ?

I finally tore out my tomato plants this week and I'm using the last few green tomatoes and some homegrown chillies to make a lactofermented salsa.

Everything from the garden is diced along with some onion, garlic and some vine leaves I liberated from a neighbours garden. I'll let it bubble away for two or three weeks and see how they go.

Relatedly, the slow nature of fermentation is a great contrast to the more-hectic pace of whatever else is going on. And it doesn't require a screen of any kind! 😀 🥒

Je suis une magicienne : j'ai récolté une tonne d'ail des ours, et je l'ai faite retnrer dans un bocal de 750mL 🧙. En route pour la lactofermentation, j'ai aussi mis quelques boutons de fleurs d'ail.

A jar filled two-thirds of the way with chopped mustard greens, onions and garlic submerged in brine and a water plug (bag willed with more brine) to keep the greens submerged. 5 days of fermentation will bring out the spiciness of the mustard greens with a tang from the fermentation.
