Sourdough Starter Day 11.
doubled for the first time, so I rewarded him with a new home.

This is a Goldie by sourhouse.co. A warmer which keeps him in the “Goldilocks” zone of 75* to 82F*.

This is a life support system befitting of a sourdough starter named after from . 🤣. It even resembles his life support unit.

He is spoiled and doesn’t even know it yet.

今日:

又有东西坏了,紧急购买。说服自己:命运的旨意。

上次的酸面包,我说味道有点诡异的那只,确实是全麦粉放太久了,今天这只就很正常。因为是做过太多遍的流程、吃过太多遍的味道,所以就算出问题,也终于不会首先觉得是自己的问题。但我仍然不会安心。

面包在炉内裂开一条细细的斜纹。烤箱没有内灯,我打着手机灯看,生怕那耳朵就真的长歪。它状态不算太好,天实在太热了,我努力控制面温,简直是在从夏天嘴里抢救面包。再热下去只能等开空调再做了。这么想着,挨着烤箱扇风,给面包扇风,边等着它晾透边扇风。就是在这段等待里,有东西坏了。

抱着蒲扇不离手。从夏天口中抢救自己。

Les presento a Pancracia, es una masa madre joven, tiene un año . :blobcat:

又吃意面。其实不是因为我又想吃,而是意面品牌、煮面时间和锅这三个影响因素一起变了的那顿饭,我煮出了很糟糕的面。今天好多了,但还不是最好吃的状态。我明天还会煮意面因为我怀疑锅也有很大影响……

这只面包是前天烤的,味道也很诡异,内部组织也没那么好。其它因素都较稳定所以我只好认为是那袋全麦粉放久了,等新粉到了以后我要立刻再做一次。叹气。

但是反正大家吃不到,请假装它们好吃!

Amazing #sourdoughbread with fresh milled flour

Super happy with my #sourdoughbread.

This was 75% fresh milled dala landhvete (88% extraction), 25% AP flour. 85% hydration. I also added vitamin C and lecithin.
The taste is really good.

50%杂粮,实验暂时结束了先这样吧!

是这样考虑的:一直改粉不成,那改发酵呢?结果看来这次确实更好,组织更漂亮、酸味更宜人、整体更平衡。用了四种谷物的五种粉。

我似乎还在追逐更浓郁的味道,但仔细想了想,我一直做一直吃,对它的味道会一次比一次不敏感,对“浓郁”的要求也会愈吃愈高愈难满足。况且这些粉发酵以后,能得到的味道也只能是这个类型,我又何必要求它做不到的事情,已经足够了。

想要不同的味道,吃100%黑裸麦就可以了呀。这周其实还做了香料黑裸麦砖,但不很满意,下周再做吧,那个也很好吃!

有家面包房开始做裸麦面包了,想买,但是冷冻室的面包还没吃完而且下周还想做,等等再说吧……
