Did some very midsummer (juhannus) cooking today.

Fish Wallenbergs with new potatoes, a traditional egg sauce (bechamel based) and new season cabbage slaw with lemon, olive oil & dill.

Our fishing upstrairs neighbour who brings us fish in exchance for sourdough bread brought us some pike and perch last week. Had some zander in the freezer and so these three kinds of lake fish cakes were born. Panko crusted gourgeousness.😋

Making #viili (#filmjölk) from seed, according to my mum, with gaps filled by @pikkuotus and teh intertubes.

You want reasonably fatty viili and milk from store.

Everything room temperature. Don't use antibacterial soap to wash the dishes.

Mix up the viili so it's even.

1 tablespoon of seed viili into a small dish, 2 dl of milk on top.

Let it sit covered in room temperature for 32-48h. Viili likes darkness, and hates movement.

Keeps in fridge for a week.
