M Test Kitchen, an Asian Fusion restaurant in the Fenton shopping district in Cary, NC. They have a rotating menu so you'll always get something new each time you visit. Reservations are highly recommended! I managed to get an empty shot of the bar area as we got there right as they opened, and a few minutes later, the whole bar seating was packed! The beer featured on the third photo is a Sapporo. The drink on the forth photo is a Japanese take on a Hot Toddy, perfect for a cold evening out! Shot in January 2025.

Today's adventure in eating-while-parenting.

Back from a run during the kiddo's nap, hunting around for something to eat. Had some leftover plain rice from the Japanese restaurant, had some roasted seaweed snacks from TJ's. So I rolled some little rice&seaweed rolls, but I wanted some protein in there. couldn't find anything, then... Inspiration! Peanut butter! Kinda like a peanut sauce sushi thing? I dunno. Wasn't the worst thing I've eaten out of desperation while the kid was busy...

Food Adventures continue! When we started this adventure, I only intended to do one dish per country. Then the suggestion was to do a meal and a dessert! Making up the countries that had only one dish slowly. Australia’s dish was a pavlova so had to go back and make a main. Here we have chicken parma Aussie style, served with home fries and a radicchio salad. This was tasty! Algeria represented by nougat! First time making nougat. Bit of a learning curve. When I was looking for recipes, the temperature for the sugar ranged from 250 to 300. I went with one that said 250 but the result was a little soft (very delicious though) so I am going to try with a higher temperature next time. I would like something denser. The timing of the eggs whites and the sugar temperature is an interesting challenge. I would like to have a nougat recipe in my back pocket so I will try other recipes until I get it to where I want it.

Bosnia and Herzegovina are represented by Börek/Burek - phyllo pastry with spinach, cheese, and beef. I didn't make the phyllo pastry myself, I bought frozen! Relatively easy to assemble. Tasty and oodles of leftovers! Now that we are also doing simultaneous meal and dessert adventures, I have upgraded my tracking system from chicken scratches to spreadsheet!

Bolivia is represented by anticuchos with boiled potatoes, corn, and a pepper sauce. This was simple and delicious. I reduced the heat in the marinade and the pepper sauce to suit everyone's tastes and it was still delicious. I am appreciative of recipes that include substitutes for a less spicy version! I am making alfajores for the Bolivian dessert - I made the dulce de leche today and I will make the cookies this week! I make dulce de leche on the stovetop (rather than in the can) so I spent the afternoon stirring and my shoulders need a break!

Food adventures! Honourable mention!

I am trying to make up some of the desserts from the first eighteen countries. This was meant to be almond and cardamom brittle from Afghanistan but I had the brittle going before I realized that I was out of almonds!! I figured it would be a good practice run anyway so I used the pecans I had. I will admit that it was an absolute pain to make - recipe said it would take 15 minutes to get to 300F and it took 40! But so good! I am in my cardamom era now!
