Finally started working on the many.many.many tomatoes I froze during harvest.

I've never done salsas or anything like that, so I consulted my Univ. Georgia Home Preserving book and found a couple of recipes.

First up was "tomato taco sauce" which is basically a salsa with vinegar instead of lemon juice. It's really tasty!

Braiding garlic turns out to be surprisingly difficult. This will have to do, and I hope the vampires won't mind.

Aji Rojo jam! It ended up having a lot of red bell pepper because the aji peppers aren't very juicy. Either way, it tastes delicious and the leftovers in the pan are already setting. #food #chiles #peppers #preserving #cooking

We might actually see some freezing temps here. I'm going to have to harvest my aji rojo chiles and prune the plant back so I can bring it indoors. I've probably got a pound or two of these small red chilies. Aji Rojo isn't spicy but otherwise tastes like a habanero. They keep well but I'm not going to eat them all before they go bad. What should I do with them? #food #chiles #peppers #gardening #preserving

The very old stone wall of our barn. Joints partially filled with newer and historic mortar. The two boards in the upper right corner were once part of the wood paneling in a residential building. Before the 1900, our stable was a residential building, and two or even more families originally lived in this house on two floors.

Last harvest of 2025!

They say to leave parsnips in for awhile after the frosts. We've had a few frosty mornings, so I thought mid-November was a good time to go get them.

A good haul! Much better than I've done in the past. I think my soil-regeneration efforts - cover crops, rotation and compost - are helping!

Now on to blanching and freezing these lovelies.

Stacks of preserves on a pale coloured kitchen counter top.

Front left a triangle of 6 jars 3 at the back then 2, 1 at the front, and 1 on top. Round jars with red lids. Dark filling.

Behind that a triangular stack 5 at the bottom then 4, then 3, for 12 jars of a dark substance glowing redly with back lighting. Hexagonal jars with silver lids.

Front left 2 stacked on 3 sliced pickled jalapeños, mainly green, a few red. Hexagonal jars with black lids.

Behind that a big stack of hexagonal black lidded jars containing a reddish brown chunky looking chutney. One jar on 1.5 from the left on 5 jars, on top of 6 jars, on top of 7 — 19 jars.

We have 2637g of the plain #quince extract. This year it has started to go deep red already, and has so much pectin that it's gelling up around the edges before I've even added sugar and boiled it down. So different to last year's small crop off the same tree!

The chilli & spice quince extract is still extracting.

I am running short of jars right now, have been rounding up all sorts, mainly a mix of what I have left of hexagonal jars, and a bunch of saved Promite jars (thanks to Kat's foresight!) Got them all in the dishwasher on a 70°C cycle.

Will add sugar and start cooking down the jellies in an hour or so.

For now... a second coffee and a sit-down. Feeling kinda bushed. Not sure what, if any, #allotment activity will occur today. (TBF on myself the #preserving ought to count as an allotment activity.)

Dinner was a pretty quicky rustled up sorta Spaghetti Amatriciana made with the last of the roast tomato & garlic passata. Just add a bit of Romanian cured pork belly, a shallot, and some pecorino romano.

The tomatoes, garlic, and shallot all from the #allotment of course.

The new Weck jars arrived today, so this super rich passata has gone into the small ones for future pasta dinners. Six of them, about 3kg more passata for the passata store.

The Weck seals seem to have had a slight change of material and they're harder to get in place now it seems. Which is a bit of a pain, but worked out a technique for it.

I didn't know what to expect from growing/harvesting amaranth, so this whole process has been a learning experience. I guess my method of getting the seed off the heads produces quite a bit of chaff because maybe 25% of what's the bowl actually was seed.

Not pictured is how I separated chaff from seed: a hair dryer and two cookie trays, and a slow pour out of the bowl. It worked. Mostly. Wow I have seed for both consuming and for planting next year!

#Gardening #Harvest #Preserving #Seeds

A bowl of seed and chaff, with a fine strainer bowl inside as well, which holds amaranth flowers and seed being shaken and rubbed to get the seed out. Behind the bowl is a cardboard tray with other amaranth seed heads. Everything is on a couch on the closed in porch.A plastic bowl holds several cups of amaranth seed and chaff.A small, covered glass jar is about a third full of winnowed amaranth seed. A masking tape label on the jar reads "Amaranth 2025". To the left of the jar are jars of canned green beans, and to the right are jars of canned carrots. Below the seed jar is another shelf full of jars of canned green beans. So. Many. Beans!
