For some reason many things I cook turn out to be a stew. I often cook without a recipe and orientate the dish around the ingredients that are meant to be used up. The easiest way to do that is put everything into a pot and boil it. Often I do roast some kind of Soffritto/Mirepoix to get some flavor into the dish before adding liquid.

They had a truck at 43rd/ 9th last night. I asked the guy ahead of me if he was getting the spicy brains but he shrugged no. They got duck blood noodles, chicken feet and pig feet (trotters), chicken skin, beef fat, and a tin foil bowl of spicy brains. Fantastic variety, noodles, too ~
(I got sticks of beef, lamb, chicken, and shrimp, eight bucks. Had to decapitate and peel my shrimp tho)

Decided on making a beef stew for dinner. Just like the "soup" I made the other day but with stew beef instead of pork/burger mix.

A hearty, cozy vegetable stew.

Carrots, celeriac, onion, & garlic are sautéed in olive oil, deglazed with homemade veg stock, then simmered with herbs & bay leaf.
Air-fried Brussels sprouts, bell pepper, & potato are added.
The stew is partially blended for body without added starch.
Served with a small portion of chickpea pasta, halved vegan “meat”balls & green onion rings.

Precooked, overnight-chilled potato & legume pasta were used to reduce fast carbs.

With it being #chilly here this morning, I thought I might make a #beefstew for #dinner tonight.

Then I saw a can of #BakedBeans & wondered if they would improve the #stew.

A bit of online searching found that adding baked beans to a stew is a thing!

I’ll give it a try. 🤗
