Having a panic attack about the drs appointment today. I booked it this morning because I’ve had consistently swollen fingers and toes since last year. Been having to splint because the pain is so bad.

I went last year and they sent me a text saying it was just fibromyalgia and to take optimal pain relief. Splints and taping help, but not practical when it affects both hands.

On Friday, I’m going to Leicester for my nephews birthday, and I’ve just found out that my sisters ex has stayed over a few nights. I’m staying at her house.

I can’t promise that I won’t say something to him. This is the guy who held my nephew by the throat, off the ground, who I reported to social services because I was so worried about my niece and nephews. I hated doing that, but my sister wouldn’t and my mum and step dad knew, but didn’t even talk to him about.

Decided I’m not going, as getting a vibe of not really being welcome, but that could just be me.

Going into town on a Saturday, to meet strangers in popular places, is my worst nightmare, but going to try and do it.

I cooked it for 25 mins at 180•c then warmed up for 10 mins. It was very nice warmed up, will see what pastry is like when it’s cold. But for a vegan, gluten free and oil free crust, it was very good.

For the filling

6 white asparagus spears

6 green asparagus spears

1 large or 2 small mild red chillies

300g (1002) silken tofu

100g (3Y202) soy cream, or other
plant-based cream

1 heaped tsp cornflour

1tbsp olive oll

1tsp dried oregano

1tsp dried basil

freshly ground black pepper

Instead of cornflour I added orgran easy egg, and added red onion instead of 2 lots of asparagus. I also added about 200g of cathedral city plant cheese, and sheese on top

This is the pastry recipe, which happens to be oil free too (purely an accident, it looked the easiest 🤣)

I have the aqua optima hot and cold water dispenser (filters the water too) and my mum still doesn’t understand that we use the water we put in. She thinks the water stays in the tank, it’s just so bizarre. For some reason she can’t understand that we put it in, it filters and we use it, top it up when needed.

She’s had a water filter jug before, I’ve explained that it’s like that, but I’m just able to heat it up as well.
