Dieses Rezept habe ich gestern mit #Bulgur und dafür ohne #Kartoffeln ausprobiert.

Sehr lecker, total einfach und man spart die Zeit für Kartoffeln schälen und schneiden. Auch die Kochzeit ist etwas geringer, weil Bulgur nur etwa sieben Minuten braucht.

Bulgur Tomato Salad with Mozzarella – a perfect light Lunch or Dinner

You know those random kitchen ideas that suddenly turn out to be brilliant?

That’s exactly what happened here. I was standing in my kitchen, craving something quick and light — and then it hit me: why not cook bulgur in the rice cooker? It’s faster than boiling pasta, there’s less steam fogging up the kitchen, and it’s honestly the easiest thing ever.

Let’s see what else I added to my salad:

Ingredients (for 1 person)

  • ½ rice cooker cup bulgur
  • ¾ cup water
  • 3 large beef tomatoes
  • 125 g mozzarella cheese
  • Salt and pepper to taste
  • Salt, curry powder, paprika powder, and Italian herbs to taste
  • A few tablespoons of Olive oil
  • A few tablespoons of Balsamic vinegar

Preparation

Cook the bulgur in the rice cooker with the water — it only takes a few minutes until it’s fluffy and tender, kind of like al dente pasta. When it’s cooked, I recommend to fluff it as you would do with rice, unplug the rice cooker, and let it sit for another 4-5 minutes.

Then, remove the lid and the cooking pot from the cooker, and let the Bulgur cool down while you chop the tomatoes and mozzarella into bite-sized pieces.

In a bowl, combine everything and season with salt, pepper, curry, paprika, and Italian herbs. Drizzle generously with olive oil and a splash of balsamic vinegar, then toss until well mixed.

I ate half of the salad for dinner, and brought the other half to work the next day, and I have to tell you: If you can, let the salad rest in the fridge for a few hours (or even better, overnight in an airtight container). The bulgur soaks up the dressing beautifully — way better than pasta ever could — and the flavor becomes so much more intense.

I was honestly blown away by how good this turned out — so simple, yet so flavorful.

Turkish lamb köfte with grilled eggplant and longhorn peppers.

Tomato and yogurt sauce were perfect condiments to lift up the flavors.

On the side, there were bulgur salad dressed with tahini and ground walnuts, plus, blanched dandelion greens with capers and olives.

Homebaked pide cleaned up the plates — the dinner was delicious and very saucy after all.

Angry about the degree to which we've taken it completely for granted that all websites harvest our data for money now. Browser games? Harvesters are in place. Book reviews? You better believe they're harvesting. Statistics tips & tricks? It's harvesting season!

Even with the GDPR, which means that I can (hopefully? maybe?) disable data harvesting, we have just accepted that this is what pretty much all websites do if you let them, because of course, they *have to* make money. That's part two I guess, that everything has to be profitable and we've just gotten used to that.

You're a recipe website! It's just supposed to be recipes! Sorry that there is not sufficient profit in what should just be a nice website run by enthusiasts who share server costs, but that doesn't mean you should get to sell my behavioural data to data brokers!
