Thought I had a gem squash, so I decided to precook it, stuff it with orzo risotto, and bake it. I actually had a spaghetti squash! Completely different cook time and causd me much confusion. Got there in the end...filled my belly, but a strange combination of textures. Wouldn't recommend it!

Feeling much better after about 5hrs "hard reboot" sleep and a good painkiller.
Still feeling wiped out tho so my afternoon/evening has been very much vegetable on the sofa with YouTube. Dinner was pan-fried fake chicken with soy sauce on a bed of rice (yummy rice cooker rice!) and quick granules for parsley sauce.
Actually turned out ok.
Definitely trying fake chicken again... Maybe marinaded in Dr Pepper or Cola or some-such...

4 cups of ripe kiwi berries, also known as hardy kiwi fruit. They taste just like kiwi 🥝, but are each about the size of a grape. Here, I'm cutting them up and putting them in a small pot to cook on the stove. I'll add about a cup of pineapple juice as well (pictured in the back).

Time to start cooking them down. Pineapple juice had been added. Once this starts to boil, I'll add about 4 cups of sugar.

They're about ready for sugar! The fruit has started to break down a bit (though I ended up pureeing them after I added the pectin to make it easier to pour the mixture into jars).

Albanian cuisine is represented by Pispili, a fried bread filled with seasonal vegetables and cheese! Flipping large pancakes is always risky but I managed to get it turned over without breaking it! This was very delicious! I found both wheat and corn based variations and I chose wheat. I would happily make this again!

Today's adventure will be making kimchi and figuring out what to do with my bok choy and shishito peppers.

I'm thinking of adding some of the Bok Choy to the kimchi... I've only got normal green cabbage, not Napa... so it's already bastardized-- not worried about that.

What should I do with the rest of the Bok Choy, though? My husband and I bought a bunch of heads, and since I forgot to cook him some to take to work this week, I have to figure out what to do with it. I don't particularly want to just stir fry it, but I suppose I could.

As for the shishitos... I'm not a big fan, myself... that's my husband. I gotta figure out something I can do that will hold til Friday at the very least.

FUCK. I also have a butternut squash and two acorn squash I need to figure out what to do with.
