Marine extreme events such as heatwaves, #ocean #acidity extremes and low #oxygen extremes can pose a substantial threat to marine organisms and #ecosystems.

From 1961 to 2020, extreme events have become more intense, longer, and occupy more volume, driven by the trends in ocean warming and #acidification.

Triple extreme events are confined to the tropics and the North Pacific and tend to be associated with ENSO.

@marksquires Apparently Madeira, like Santorini, has very little potassium in its soils, which is one reason the wines are so high in acidity. #volcanic #wine #acidity

@pthane
Some varieties that tend to lower acidity include Viognier, Gewurztraminer, Marsanne, Treixadura and Auxerrois (white); Grenache and Dolcetto (red). But relative acidity is still largely a function of ripeness at harvest and winemaking practices. And sometimes producers will acidify their wine, especially at lower price points. But maybe look for white blends from the south of France that are mostly Viognier and Grenache Blanc. #acidity in #wine

@pthane
First, do not believe what you read on-line about acidity: a lot of those sources are just plain wrong.
Second, wine is an acidic beverage. The differences in acidity between wines is only relative.
Third, riper wines from warmer climates tend to be lower in acid.
Fourth, wines that have gone through malo-lactic conversion, ie most reds and some whites, will be lower in acidity as a result.
Fifth, some varieties tend to give wines that are lower in acidity. See comment. #acidity #wine

⭐️ Malolactic fermentation affects wine’s texture and flavor, and letting it roll (or not) depends on tradition, fashion, chemistry, and more. My new Wine Science piece for Terroir Review tackles this magnificent microbial process. Enjoy! ⭐️
