Test aiming to shorten process without compromising on texture and taste.
Bread baked with dough prepared with T65 flour, 12 g fresh yeast/kg flour, 14g salt/kg flour, and th=74%.
First proofing at 25°C for 40 min, and after shaping second proofing at ~20°C for 30 min in basket.
Aftet baking the loaf is well aerated, size of the bubbles are pretty nice, and above all, incredibly and extremely soft and fluffy as shown on the video.
Due to short proofing, taste misses a little bit in crust and crumb, but is still very nice.

Result for the dough being divided into two pieces to test short proofing (2h at ambiant temperature) and long proofing (40h in the fridge).
After 40h proofing, the smell when dough was baking was incredible and after baking, the taste and smell of the crumb is incredibly delicious. Even if crumb would be likely more aerated, it is extremely soft. Bread is also really crusty and browny than the less proofing bread, this contribute to better texture and taste.

Bread baked with dough prepared with T65 flour, 6 g fresh yeast/kg flour, 14g salt/kg flour, th=70%, first proofing at 25°C for 2 hours, and after shaping second proofing 20 min in basket. It is well aerated but a little dense, not too fluffy as posted previously with 6g of fresh yeast/kg flour and 1h30 proofing. 

Dough was also divided in two parts, the first one was used for the bread shows here, and the second one is still in the fridge for a 48-hour proofing. A next post will show photos for comparison.

Photos of a freshly baked loaf, made with the same recipe and process as the two previous ones, but with a few tweaks to the proofing : a bit more fresh yeast (12 g/kg of flour) and a higher proofing temperature. First proofing was 1h30 and after shaping, the second proofing was 30 min. These adjustments improved the texture of this loaf compared to the two previous loaves, which were well aerated but still a little dense.

Crumb of this today’s loaf is really nicely aerated but mainly very fluffy as the video shows. Before baking, the loaf weighed around 480 g, then 400 g after baking while keeping a good volume. Its crust, is crispier than the two previous loaves due to 10 extra minutes in the oven, creating a very pleasant contrast between the crunchy crust and the very soft crumb.

Made a yeast dough for one loaf, and sourdough for two, with the intention of baking the yeast dough today and the sourdough tomorrow. Somewhat ironically, the yeast dough rose much slower than the sourdough, so I decided to bake the sourdough today as well. And they came out much better than the yeast loaf as well 🤷
