Guys, i think i did the thing. Best loaf yet.

500 gr. Bread Flour 370 gr. Water (74%) 75 gr. Starter 11 gr. Salt Mix flour and salt, mix starter into water, combine all. Mix in stand mixer until dough essentially passes windowpane test. Bread baked with dough prepared with T65 flour, 3 g fresh yeast/kg flour, 14g salt/kg flour, th=70%, first proofing at 25°C for 2 hours, and after shaping second proofing 20 min in basket. It is well aerated but a little dense, not too fluffy as posted previously with 6g of fresh yeast/kg flour and 1h30 proofing. 

Dough was also divided in two parts, the first one was used for the bread shows here, and the second one is still in the fridge for a 48-hour proofing. A next post will show photos for comparison.

Kiddo has a fever and just isn’t feeling well, so I made focaccia cheese bread for dinner. Which is basically a deep dish no sauce cheese pizza.

And I made some protein pancakes this morning, which is basically just eggs and milk.

芋泥一做就要連續做個芋泥系列,今天的早餐是芋泥麵包。

《我們這一家》裡,花橘子到同學家作客,同學的媽媽很愛做麵包,所以不僅讓他們一起參與手作,還跟他們分享現烤剛出爐的麵包,吃的橘子好生羨慕,回家之後花媽跟他說家裡有個之前爸爸抽中的麵包機,橘子興奮地翻箱倒櫃,想要自己做麵包,沒想到!沒想到那台不是變包機,而是麻糬機,立刻被結案。

小知識:包含《我們這一家》的很多卡通動畫,都會「教導」觀眾說麵包要剛烤出爐熱熱的才好吃,我開始做麵包後才發現那是錯的,麵包剛烤好時不太適合吃,除了因為水分還沒蒸散,結構還不夠完整會太濕潤、燙口之外,也因為二氧化碳都還在沒散出來,所以吃了容易脹氣,建議稍微放涼再吃。

「剛烤好的麵包最好吃」就跟「撿到小貓小狗時要餵他們喝牛奶」(因為他們大多有乳糖不耐症,要用貓狗專用奶)一樣,是有害的都市傳說啊
