On current (Android 14/15) versions (2025 as of writing this) of the app Google Authenticator, the actions for editing and removing individual TOTP codes are surprisingly well hidden.The solution: both actions can be reached through swiping the list items:

Swiping to the left: delete

Swiping to the right: rename
