PEACHES & SAGE

8-10 sage leaves
¾ oz lemon juice
¾ oz peach liqueur
½ oz Oloroso sherry
2 oz cognac
2 dashes bitters
1 egg white

Garnish: sage leaves, peach wedge
Method: Combine all ingredients in a shaker and dry shake. Add one large ice cube plus a cheater cube, and shake hard. Double strain into a chilled coupe, let the foam stabilize for a moment, then lay a thin slice of peach and a sage leaf on the foam as garnish.

I think this is an original from IG cocktails_with_mike (at least he didn't cite anyone). I'm not a huge fan of sage, but I have to say this was a nice play with the sherry and citrus in particular, with cognac and bitters making it an autumnal affair.

Am I missing something or is EU making #eggyolk and #eggwhite illegal because those terms are reserved for products containing meat ???

Just saw the phrase
“Like Egg White As It Boils”
And, I know what they meant was "Like egg white in boiling water". Is OK, I am not that dim.

#eggWhite is not white until after you boil it. Before then, it is vaguely yellow. Odd to have a name that depends on being ruined first. (wiki note - 'albumen')

The question then, my fellow corpses:

What could *boiling* egg white be? Not #boiled. #Boiling.

Is it possible? When? How? Does boiling always denature/cross-link the proteins? Can you stop that happening?

Thinking of buying a Temu vacuum chamber (I bet they fucking do have them, shaped vaguely like sextoys, sure, but vacuum chambers nonetheless) just to see what happens.

Maybe there is a chemical that can fill-up the sticky parts of the proteins so they cant bind onto each other? and I could boil it at room temp and pressure?

Anyhooo, that's my odd thought for this morning.

After years of thinking about it I finally bit the bullet and bought a bottle of Pisco. So here’s a new-to-me cocktail.

Pisco Sour

2 oz/ 60 ml Pisco (Caravedo Mosto Verde used)
1 oz/30 ml fresh lime juice
1/2 oz/15 ml rich simple syrup
1 egg white
Angostura bitters

Combine Pisco, lime juice, syrup, and egg white in shaker without ice. Dry shake for 20-ish seconds. Add ice, shake again for 20-ish seconds. Double strain into chilled coupe. Garnish with 3 drops of Angostura bitters.
