Today is the 50th anniversary of the end of the Vietnam War. For @foodandwine, Doan Nguyen writes about how her parents escaped Vietnam in a fishing boat with nothing. They eventually made their home in Kinston, North Carolina, where Nguyen was born. Through her childhood, she mourned the family heirlooms and hand-me-downs she would never have, but as she grew up, changed her perspective. "I find it amazing that so many displaced people — especially my parents — took giant risks to better their lives and, in doing so, changed the landscape of food in America," she writes. "Their courage and the kindness of the people who fed us along the way are heirlooms I will always carry with me."

Here's their guide to cheese-eating, from planning what to serve to using up leftovers. Plus, how can you tell if your cheese has gone bad? “Surface mold can be scraped or cut off revealing a happy cheese underneath," says Julia Hallman, owner of Formaggio Kitchen, Massachusetts. "Once you trim your cheese, give it a taste! My grandmother taught me so much about cooking, preserving, and making the most of what we have. Fermentation has always been part of our traditions—not just for preserving food, but as a way to gather, share, and pass down knowledge. It’s in the collective hangouts around the table, in the slow transformation of simple ingredients, and in the care of those who came before us.

Seeing her hold this poster for our fermentation workshop with @thebigbellysupper makes me so proud. It feels like a full-circle moment!

This happened on the 22 March at Casa Independente (Lisbon) an afternoon of fermentation, storytelling, and good food. We explore flavors, traditions, and the magic of transformation.
