If you whether as a company or through lawyers deploy the "We do not recognise..." line, you are disrespecting and degrading peoples' lived experiences.
That is not the attitude or approach I would ever have expected from a supposedly ethical organisation like the Co-op,
And the 35 word sentence without full stop or breath from the Co-op spokesperson sounds like something I'd expect to hear from Gus Hedges in Drop The Dead Donkey.
This reflects more poorly on the person who wrote this than on the junior on many levels. Even as a "joke".
People who seek to exploit others will often brag about providing them with the most basic and decent things, such as an employer that is giving its employees a barely decent salary (when forced and pressured by the employees, of course).

Reddit has a discussion group for world politics called.../r/WorldPolitics. Old moderators left and new mods took over. Those mods decided that all moderation was censorship and refused to delete any post. The discussion group became filled with porn and spam.
The Reddit administrators refused to do anything about it.
The people who wanted to discuss world politics created /r/Anime_Titties in protest. It is actually a thriving discussion group for world politics.

I'm doing PoCs to solve for a very important problem, which had leadership buy-in when the project started. Now leadership has changed, and I've nearly decided on which product I want to adopt -- but new leaders won't attend the summary. And when a competing vastly inferior product invites them to a sales call, they attend. Now my entire project is in jeopardy.

I could see in my career bad designed projects going in production and failing miserably, poor choices made because they cost less (and that’s not true at all!) and people who thinks about the IT as a cost and not as an investment for their own business.
So, let me tell you something you still don’t understand: if you don’t care about the quality of the service you’re going to build and deploy, then you don’t care about your customers and their user experience with your product!
Why are you wasting your money buying a support contract from a software vendor, if you’re going to ask a consultancy firm to provide you professional and managed services?
Just adopt an open source solution and pay a consultant to support you.

If your team is assigned to work on a nigh undocumented beta-tier, buggy & complex framework version (which has newer, stable *and* documented versions available) with unrealistic delivery timelines & expectations, start looking for another job.
You're being setup for failure. The stress of staying until that inevitable failure finally happens is worse than the stress of between-jobs income instability (if you can't quickly find something, do still leave, seriously).
