I was in San Diego last year and visited Youngblood, a speakeasy inside a speakeasy... they know how to be hip in SD! Anyway, at the time they had no menu; the bartender would just get your vibe for each of three rounds. This was my "boozy" round 2, where I gave him a prompt of cognac. Second pic is the original that I drank at the bar.

PUMPKIN SPICE OF

I have a huge planter full of cinnamon basil and thought it would play well as a warming spice in this autumn-style old fashioned. What’s more, my pumpkin syrup was generously spiced, adding hints of clove, cinnamon, nutmeg, pepper, and ginger.

BITTERSWEET IDENTITY CRISIS

2 dashes lavender bitters
½ oz orgeat
¾ oz Green Chartreuse
1½ oz mezcal

Garnish: lemon peel
Method: Combine all ingredients in a mixing glass, add ice, and stir. Strain over a large rock of clear ice, express lemon peel, and garnish.

I saw this from IG highproofpreacher and felt compelled to try it immediately. As he said, it's a weird one! But it was delightful and confusing on my tongue all at the same time. Sweetness from orgeat followed by the herbal notes and finishing with smokiness, it defies categorization. I chose a slightly higher proof mezcal from Alipús at 47.5% which stood up nicely to the Chartreuse and fat pour of orgeat.

I didn’t have lavender bitters, so I went aromatic with home-grown lavender from my balcony slightly charred with a flame.

SANDÍA HIGHBALL

½ oz lime juice
¼ oz ginger syrup
1 oz watermelon juice
1 oz Aperol
1 oz Tequila blanco
float 1-2 oz seltzer

Garnish: mint sprig
Method: Combine all ingredients except seltzer into a shaker, add ice, and shake. Strain over a clear ice spear, add seltzer, and garnish.

Seen on IG anatomyofadrink channel. He took the Sandia recipe, created in 2016 by David Valdez at Simbal (Little Tokyo, Los Angeles; now closed), and turned it into a highball by adding soda water. I batched this up and took it to a garden party today — it was gone quickly!

Method: Combine all ingredients in a mixing glass, add ice, and stir. Strain over a large rock of clear ice, express an orange peel, and garnish with it.

I whipped this up on a whim after a long summer weekend filled with activity. A storm arrived in the evening and I wanted something to go with the chill in the air. I used Doctor Bird as my base, whose funkiness gets elevated by the banana/cacao liqueur. Overall quite sweet tbh; maybe next time I'd reduce to barspoons of liqueur instead of quarter shots, or use an OP as the base spirit.

LAGOON WATER

½ oz lime cordial 🍋‍🟩
¼ oz blue simple syrup 🔵
1½ oz gin
1 dash umami bitters
4 drops saline
top with seltzer

Garnish: orchid
Method: Set soda aside and build drink in glass in the order listed. Add a large rock of ice, add soda, and stir until color is even.

I found this one on the cheerstohappyhour IG channel and had to work my butt off to make it happen ;) The build is quite involved as listed, making blue simple syrup and I also had to make the lime cordial (I'd wanted to for a while anyway). The umami bitters are also very niche, but luckily I'd already gotten them for another cocktail some months back. And finally, the clear ice and maintaining orchids at home are both their own projects spanning days/months :D If you can manage to make it, it's got a five-star look and tastes great on a sunny afternoon!

🔵 Blue simple syrup: combine 1 cup sugar and ¾ teaspoon blue spirulina powder (or food coloring), and stir to incorporate dry ingredients. Once mixed, add one cup water then stir until everything is dissolved.

HOODWINKED

½ oz lemon juice
1¾ oz pineapple juice
¼ oz simple syrup
½ oz Aperol
2 oz mezcal espadín

Garnish: pineapple wedge, pineapple frond
Method: Combine all ingredients in a shaker with ice and shake. Prepare pineapple wedge by pouring some harissa into a small plate then dabbing one side of the wedge to cover it. Strain over a large rock and garnish with the prepped wedge plus fronds.

A fun Jungle Bird riff for the change of seasons. Nevermind spring or fall, it works for both! Spec is originally by Devon Espinosa but I found it on The Educated Barfly's IG channel. My pic is lacking the fun harissa-pineapple garnish, but luckily I had frozen some fronds the last time I had a whole pineapple, so it's at least half garnished.

CHOCOLATE STOUT OLD FASHIONED

3 dashes walnut bitters
½ oz chocolate stout syrup
2 oz Black Blended Rum ❺

Glassware: Old-fashioned
Method: Combine all ingredients in a mixing glass with cracked ice and stir. Strain over a large rock with no garnish.

This is my twist on the original from High Proof Preacher on IG a few days ago. I started out with Sazerac rye (in bg of second pic), but ultimately I settled on a totally different base spirit, black blended rum (pouring pic), since it has toasty dark notes that complement the beer so well. I also did some black walnut bitters, trying to lean away from your typical orange vibe in an OF.

For my stout syrup I used Northern Monk Patrons Projects 43.02 — Dunked Chocolate Digestive Decadent Stout.

Cutting my own #clearIce for #homeBartending - lots of work but it pays off!

I use directional freezing with a cheap Coleman 5L cooler whose lid I completely removed, placed within the bottom drawer of a kitchen freezer. I leave it in there for 2½ days then slice it into shape. For shaping, I use a bread knife to serrate one edge of the ice until the knife is about a third of the way into the ice, then tap it like a chisel with the handle of my biggest knife (a hammer would also do). If the serration was clean and deep enough, your first strike should snap the ice clean in half.

You could do much bigger batches with a chest freezer and bigger cooler. For me, one freeze gets me 5-6 really shapely rocks plus when I’m lucky I can manage one collins spear (you can see it in the photo!)

OJEN COCKTAIL

3 dashes Peychauds bitters
¼ oz (optional) orgeat
2 oz Ojen anise liqueur

Garnish: Peychauds float
Method: Fill a chilled double old fashioned glass halfway with crushed ice, add the anise liqueur, optional orgeat, the initial dashes of Peychauds, and swizzle. Add more crushed ice and swizzle again. Finally, top with additional crushed ice until it is higher than the glass, and float the Peychauds bitters on top.

This one was inspired by @SonicAlligator@gram.social who recently posted a top-down photo of a negroni. The spec actually calls for crushed ice, but the large rock plus Peychauds float is still a really pretty effect IMO. It definitely needs crushed ice and a good swizzle to taste like the spec intends though. The spec comes from the book Cure: New Orleans drinks and how to mix 'em, page 51.

* Strawberry infusion: chop half a cup of strawberries and cover with the Luxardo Bitter Bianco. Allow to sit for 3-4 days and then bottle. It seems to last a few months in the fridge.
