1¼ oz sweet vermouth
1¼ oz Campari
4-5 oz pilsner beer
Garnish: lemon peel (not pictured)
Method: Build in a frozen glass over a large rock, adding beer last. Foam some beer by whipping it and float on top. Keep everything ice cold before building!
I saw this on IG thirstywhale_ channel who called it Beericano, but it was originally called an AMERICANO PERFECTO by Damon Boelte while working at Prime Meats in Brooklyn, NY. I think Justin's addition of foamed beer was a nice touch.
Instead of a pilsner I used Les Intenables Crispy Chill, a hoppy lager. It's light as a feather, but has a bit more bitter to it than a run of the mill pils and is certainly less sweet. Les Intenables is one of my favorite local-ish breweries. If you live near the Rhein you should definitely check them out.

Surprise and delight! I saw Festbier on the label, and thought Oktoberfest or märzen. The color and huge persistent head smashed that assumption. This is a Helles, and an excellent one: Apples, bread, and a bit of toffee up front; baked bread, a touch of honey, touch of floral hops bitterness, good through to the finish, perfectly balanced. Light but complex. The hops are different from the typical German, but work well.
From Wayfinder, one of America's best German-style breweries. High expectations met.

I had the last bottle of my Schwarzbier yesterday.
Despite the sweet oxidation character and its age of half a year it was delicious. I even think with open fermentation and lagering I finally get that super satisfying mouthfeel of Faust beers.
I'll re-schedule this for 2026 with a little less Munich Malt and my new oxygen-free processes and then this should be one hell of a beer 😍
This says on the can that it is a cold IPA lager. Saying that something is both an ale and a lager is to say that you have, potentially, added two different kinds of yeast.

The final gravity of my Märzen is stable at 3°P. A bit sweeter than I wanted but eh, that's homebrewing. I'll rack it off the yeast and start the lagering phase on Thursday. Looking forward to that 🙂
I checked the gravity of my Märzen on Friday and five minutes ago.
It still had 5°P on Friday (after two weeks of fermentation), so I raised the temperature of the diacetyl rest from 15°C to 17°C. Today I measured a gravity of 3°P. That's more like it. I'll give it a couple of days to see if I can get down to 2.5°P. Technically, a Märzen can be a little sweeter and fuller but I like my beers dry and pintable.
