We made this rye sourdough with caraway seeds and the little ones asked for a smiling face, they also made me make a nose for it. Once baked, it grew well but the eyes sort of became all one line and I looked disappointed. The little ones looked at it and said "no, nonno, it just has more space to see the world" ❤️ One of them hugged me, "you see, when you watch well, you see more".

Whatever this might mean to you, it had a refreshing impact on my processing of current affairs.

Here the loaf is made with 40% 00 flour, 50% rye flour, 2 tbsp caraway seeds, 1 tsp salt, 80% hydration. The flours had a 3 hours autolysis before being mixed with the starter. 45 minutes at 450% covered for half of the time.

Hello. It is I, the sandwich person.

Do love me a nice grilled sandwich, but always using toast or white breads for it gets old after a while. So I shaped some of my weekly rye sandwich breads in the shape of the grill.

And omg, what a treat this is! Crispy, tasty, fiber rich and delicious. This is also in many ways very Finnish.

In it there is tomato, cheese, oregano, black pepper & garlic. Brushed with olive oil.

5/5, would recommend.

Baking them every 3th week, eating it with variations on regular German/ British-style rye-bread.
Together with the herbs a tasty blessing for the spleen.
This time with scalding overnight:

90 rye 80
450 hot water

Plus :
360 Rye 320
400 flour. 220
(620-450 =
170 water
12 yeast
16 salt

6 tsp caraway , fennel, anis,
1.5 tsp brotklee

35 minutes , 245 Celcius

A little eager to try the rye bread before breakfast comes along, so broke down and sawed myself off a slice. It has some honey and crushed caraway seed in it, and tastes pretty great.

Now back to restraint, and leaving the rest for breakfast.

The rye bread has been sliced a little and the inner crumb is medium brown with evenly dispersed air holes.

Yay, the sour rye bread has baked up nicely. Since I was doing a very wet dough project yesterday, I went that way again. My rye starter "Gary" is in fine form.

Tomorrow's breakfast toast will be yummy.

Hey! i haven't posted about baking rye bread in a bit, but i'm still baking some! I have waited all year to make this next recipe from Stanley Ginsberg's "The Rye Baker": a South Tyrolean Christmas Zelten, or a Zelten di Natale. It's related to a panettone and fruitcake, but it's not as heavy as the latter. it's chock full of spices & rum- and wine-soaked dried fruits and nuts, like raisins, figs, walnuts, and pine nuts.
