200g active starter (itself 50% flour, 50% water)
300g wholemeal flour
400g strong white flour
540g water (for 80% hydration overall including the starter)
16 salt.

Mix until all the flour is wet, rest 30 minutes, give it a bowl fold until it begins to firm up then transfer to a clean, oiled bowl.

Rest 30 mins then give it 3 coil folds.  Repeat 3 more time.

Rest 1 hour.  Tip out, shape, put into banneton.  Rest 1 hour at room temp or overnight in the fridge.

Tip onto a baking tray. Score. Bake in preheated oven at 230°C/450°F/GM9 for 15 minutes, then reduce to 210°C/410°F/GM7 for a further 30–35 mins.

(Rest times can vary, look for gaining 2× to 2½× size by the time it goes into the banneton and a little bit more in that final period.Top view of the same loaf.

OK the biscuits are out, I'm just letting them set before transferring to the wire rack and the baps are in to bake. The recipe makes 12 baps...I shaped them into 6...big baps are my thing.

Dangit I’m making more breads where the reference image in the recipe book is rounded and tallish, but my loaf spread out and not up when proving, and doesn’t look like it’s going to get dramatically taller in the oven. I did switch to a flour with higher protein % and kneaded a lot longer. Annoying. I will accept that being full of bits of cheese makes it squattier but it’s so flat sigh.

This is just the thing for a quiet Sunday morning - watching a man make sourdough bread by himself in his own micro bakery / homestead in the middle of the woods. 🌳 🍞 🌳

No refrigeration, no commercial yeast, only pre-industrial methods (beyond a mixer, because let's be real) - I found it interesting and soothing to watch the process from beginning to end. 😊

Poolish to dough to shaped balls to bread rolls.

100% wholemeal (whole wheat) at 75% hydration.

A poolish is a high hydration pre-ferment. This was 400g flour, 600g water, 3g yeast, 12g salt, 25g sugar.  After the first signs of bubbles were seen, just to show the yeast was working, it spent 18 hours in the fridge.An additional 400g, 60g of oil and 2g allspice (ground pimento) added. After mixing rested for an hour, given 4 coil folds, rest another hour, 4 more folds, 40 mins then shape.Shaped and risen dough balls, 185g each,  in a baking trayBaked 100% wholemeal (wholewheat) bread rolls.

1,480g dough into the oven. 1,320g bread came out.

A couple or three weeks ago someone posted on here about problems they were having with bread making. A retired baker replied with an offer to help as he enjoyed problem solving. Anyway, we are now in the "we have a problem" situation, but I cannot recall the name of the person who offered to help, to see if they can help us.
If anyone knows, please tell me !!

Can someone recommend a reliable recipe for homemade basic white bread? Some points to note. I don't have a mixer or a dutch oven. I do have active dry yeast, rather than fresh, compressed yeast. Not looking for a quick and easy, 'no kneading' recipe. Just the basics. Every recipe I see on the internet is quite different - all seem to have different proportions of ingredients, some use unsalted butter, some suggest an egg, some milk... It's maddening for a newbie.
