One of my favorite things to do with the zucchini and summer squash abundance from my garden: sallysbakingaddiction.com/zucc. I use orange yams, not the yellow sweet potatoes, for the added color and because that's what I usually buy. I add fresh shredded parmesan thanks to another recipe I read and I use the pancake plate in my waffle iron to make them nice and symmetrical and avoid the mess of frying.
