I thought we'd missed them this year, as they flowered and finished before I could pick any for this application.

But now they've done another round of flowering, so we pounced to get some into vinegar for a nice result.

The colour fades over time, but it's a nice flavour for your vinaigrettes etc. Our last bottle lasted a few years.

A bottle is almost full of a bright pink liquid and a bunch of flowers sit on top of the vinegar inside. Over a few weeks the flowers are bleached white and sink to the bottom. The pink of the vinegar fades to clear again gradually too. But the flavour continues and develops over time
