As well as the home made compost I also have a bin of Korean Natural Farming IMO4 inside the shed, a worm bin at home in the garage and a bokashi bin to take any unwanted cooked food waste. And there’s a pile of leaf litter turning slowly into leaf mould.

This is my composting set up over winter. We are fortunate our winters are mild. The piles are unlikely to freeze.

Two compost bays are made from five pallets. Two pallets provide the back wall and three pallets at right angles make the left side, right side and centre divide of the two bays. Two piles of compost are dark brown. The left hand pile has three black downpipes down the centre line to allow air flow into the centre of the pile. The right side pile is older compost and is noticeably more broken down.

Three different sized plastic bins or compost daleks each contain maturing compost. The lids are off to show the compost inside. An elongated oval bin contains the best, finest compost which has been sieved with a trommel. These three containers of compost will mature over winter and will be the base of the potting mix next spring.

A compost dalek nearly full of the fresher garden and kitchen waste. Handfuls of sawdust are applied with each layer of kitchen scraps every week. When this bin is full it will be turned into a different bin to continue to break down. Ground eggshells, basalt, biochar and other amendments are occasionally added to this bin in small quantities.

The bottom of the frame is wire mesh, the top sides of the frame is a loose textile mesh. I can reach in between the different types of mesh to hoe the beds from outside quite easily. Some beans in the rows have either failed to germinate or become mice food but autumn sown beans always have losses. The view beyond is of next doors plot the other side of a grass path.

November 29, 2025. We have an Indonesian hot sauce theme for this southern Minnesota snow day. The kitchen smells wonderful. Some of the fermented Sambal is getting a coconut and spices upgrade to become Sambal Kelapa. It’s four pint jars! The pan toasted coconut and spices upgrade is in the silver bowl. A November 28, 2025 milestone. The shredded carrot fermentation is jarred after nine days on the countertop. The late November fermentation went well without fruit flies or bits of mold making a scene. The recipe is in the Kirsten Shockey “Fermented Vegetables” cookbook. We use this in baked savory muffins and more. What’s happening? The garden’s soil temperature is 7 C today. The temperature should trend down and down until early March because we are in southern Minnesota. The backdrop is beautiful leaf mulch. We are fortunate. Our neighborhood has a mix of mature deciduous trees that share leaves. The old forest was the Big Woods tree mix. The old prairie was the Oak Savanna tree mix. November 19, 2025. We are fermenting the 2025 carrots. We can grow more carrots than the season shows. The other vegetables one row east were too big too fast. So too much competition for the sun. That’s a spacing issue to address. The fermentation recipe adds two heaping tablespoons of fermented ginger paste and two tablespoons of lemon juice. This is about 1,400 grams of prepared carrot so two percent salt is 28 grams. #fermentation, #minnesota, #nodig, #growyourown

We look upon the carrot crop. The lower seven carrots were happy with the garden. The upper nine carrots were under appreciated during the growing season.

The first off 6 squashes from the allotment has been slaughtered!
I roasted it and made a pasta sauce with some faux chicken, cream, blue cheese, walnuts and a bit of thyme. It tasted sooo good!
