Guiseppe Guisti Premiata Salumeria. World known producer of fine balsamic vinegar since the 16th century, operating continuously out of the location in this image, by the same family. Image of storefront.

In 1605, Guiseppe and Francesco Maria Guisti registered their "Salsicciai and Lardaroli" shop in the Duke of Modena's local business ledger. By 1700, the family was actively expanding its balsamic vinegar business. Then in 1861, in Florence at the Italian Exposition organized by the Italian Royal Family, Giusti was awarded a gold medal for its 90-year old balsamic. Between the 19th and 20th centuries, Giusti balsamic vinegar became recognized worldwide and was an unanimous success throughout Europe. Presented at various international exhibitions of the Belle Epoque, the most important of the Giusti vinegars; 30-year, 50-year and 100-year, has won numerous prestigious accolades, including 14 gold medals.

The kale and endive are cut in ribbons and mixed together in the bowl.

The Brussels Sprouts are sliced and roasted in the pan with olive oil, salt, and pepper

The Parmigiano Reggiano cheese is peeled into ribbons and will decorate the top of the salad.

It has a palate with gobs of clean and pure black cherry, subtle vanilla shadings, and a nice silky finish. Very versatile food wine that will work well with beef, salmon and even pizza.

#Balsamic update! Contrary to expectations, the Maple Bourbon Balsamic was NOT nearly as good as regular Balsamic Vinegar.

In a pot on the stove - finely chopped #onion and whole fresh #rosemary twigs fried in lard, then #pork mince, chopped old #pears in #brandy, seasoning and tons of #balsamic vinegar. Stock, and simmer. Destined for a small #pie (without the rosemary). #recipe
