Who else here is sick and tired of getting either E. coli or salmonella poisoning from *well cooked/baked* flour?! Is it just me???

PS. If you truly know how to avoid this problem while still using flour in your at-home cooking or baking, could you please tell me how you've managed that? I seriously need help with this. I want to use flour in my kitchen, but gee whiz, what's the point if I'm only going to keep getting sick from it?

After trying unsuccessfully to #veganize my mom's coffee cake recipe, I've now made the #vegan #CoffeeCake from #NoraCooks a handful of times and every time people have liked it a lot.

I modify the recipe slightly by substituting #wholegrain #spelt #flour for the all-purpose flour and reducing the #brownsugar in the topping by a bit.

and a big volumetric difference too. i put 1.5 cups in the left bowl, sifted it, the right bowl has 1.5 cups of the sifted and the left bowl has the leftover that goes back into the box. that’s a big difference in quantity.

Conclusions:
Sourdough is nicer.
Yeast is easier.

Extra strong Canadian bread flour (14.9% protein, £1.53/kg) is not practically different from

Waitrose strong bread flour (14.9%, £0.93/kg) and both are only slightly easier to use in predictable liquid absorption and gluten development than

Lidl strong bread flour (11.7%, £0.80/kg).

I've enough left for a small loaf. Tempted to try a slow/cold ferment yeast.
